May Revolution Day

Argentina's May Revolution Day recalls the formation of the Primera Junta in Buenos Aires in 1810. This local government replaced the Spanish viceroy, marking a major turning point on the country's path towards independence.

How it is celebrated: national flags accompany official ceremonies, school performances and concerts. Families often share locro, a hearty dish made with maize, pulses and meat—warming food for a holiday that falls during the Argentine autumn.

The May Revolution did not itself declare Argentina independent. That happened in 1816, which is why the country has a separate Independence Day in July.
