World Tripe Day
October 24 · Level 2 · #1902 of 2238

A cheerful food day devoted to tripe, the edible lining of the stomach of cattle, sheep and other ruminants. Some people adore it and others won't go near it, and that friendly argument is half the fun.
How it is celebrated: fans cook classic dishes such as Polish flaki, Florentine trippa, Mexican menudo or Turkish iskembe soup. Everyone else gathers to watch the brave ones and maybe sneak a spoonful.
A cow's stomach has four chambers, and the different kinds of tripe sold in shops come from different parts of it.
