Gazpacho Day
December 6 · Level 3 · #1781 of 2238

Gazpacho is a cold vegetable soup from Andalusia in southern Spain, famous for rescuing people from the heat. This day celebrates its fresh taste and its very short ingredient list.
How it is celebrated: cooks blend ripe tomatoes, cucumber, sweet pepper, garlic, olive oil, vinegar and bread, then chill the soup well. Many serve it with diced vegetables and croutons on top.
Tomatoes only reached Europe from the Americas after the voyages of discovery, so the earliest gazpachos were made without them.
