A day devoted to hummus, the creamy chickpea spread loved across the Middle East and well beyond. It shows how a few humble ingredients can turn into something everybody reaches for.
How it is celebrated: people make hummus at home, scoop it up with warm pita and raw vegetables, and hold shared lunches where everyone brings a favourite topping, from roasted peppers to pomegranate seeds.
The word hummus is simply Arabic for chickpeas, and the classic spread is blended from chickpeas, tahini, lemon juice, garlic and olive oil.
